White Chocolate Dipped Strawberries

 
Strawberries

1c cashews
1c cacao butter, melted
1/4c agave
1T water
2T lemon juice
1t vanilla
 
Blend last 6 ingredients til smooth.
 
Dip strawberries in melted chocolate,
place on plate and leave in fridge to set.

Courgette ribbons dressed in a delicious pesto sauce!
 
Pesto Sauce...
1c basil
1c rocket
1 clove garlic
1/4c pine nuts
1T olive oil
1/4t salt
2t lemon juice
 
Peel courgettes and spiralise. Place in a large bowl and sprinkle with salt. Leave to one side to soften as you prepare the toppings. When ready to serve, rinse and drain.  
 
Pulse Pesto sauce ingredients in a food processor until broken down, but leave some texture.

Mix pesto into courgette ribbons and add chopped avocado and chopped olives.

Strawberry Lime Cheesecake


Base:
Process...
1 c dates
1 c pecans
1 c almonds
1 t vanilla
1/4 c shredded coconut
pop in freezer..
 
Filling:
Blend...
2 1/2 c strawberries
1 c cashews
5 T melted coconut oil
2 T melted cacao butter
juice of one lime
1/4 cup of coconut nectar
pinch of pink salt
 
Decoration:
melted cacao butter with hemp seeds and coconut oil and some lucuma
 
swirl over the top..
Sauce:
3 passion fruits mixed with coconut nectar and serve on top

Caramelised Pecan Brownies

 
Caramelised Pecans
1/2 cup pecan nuts
2T agave
1/2t cinnamon
 
Toss the pecan nuts in agave and cinnamon
   til all the nuts are covered.
Spread on dehydrator sheet
Dehydrate for 6-8 hours
 
Caramelised Pecan Brownies
2c raisins
1 1/2c pecan nuts
2T mesquite
Pinch salt
 
Put all ingredients in food processor.
Process well until the mixture sticks together and forms a ball.
Press mixture into rectangular tin, or into individual cookie moulds if preferred.
Top with caramelised pecans and lightly press down.
Refrigerate for 2 hours
Cut into squares and serve.
Delicious with fresh mango.
