Mushroom Strawganov

 
3 cups mushrooms
1 cup water
1 red onion, sliced
1 T olive oil
1 t tamari
1/4 t garlic powder
 
Strawganoff sauce:
1/2 c almonds, soaked
1 courgette
Clove garlic
1/4 t black pepper
1/4 t salt
1/2 t nutrional yeast
1/4 t paprika
1/4 t thyme
 
1-2 courgettes, spiralised or bag of kelp noodles or parsnip rice
 
Slice mushrooms and marinade half in tamari and olive oil.
Blend almonds, courgette, remaining mushrooms, garlic, 1/4 t black pepper,
1/4 t salt, 1/2 t nutrional yeast, 1/4 t paprika, 1/4t thyme.

Burritos with Sour Creme and Nut Meat

  
 
Walnut meat
1 ½ cups walnuts
1T ground cumin
1T ground coriander
2T tamari
Place all ingredients in food processor
Pulse ‘til combined but still chunky.

Sour Creme
1 cup soaked cashew nuts
½ cup water
Juice of 1 lemon
Pinch salt
Put all ingredients in blender and blend ‘til smooth.
 
Thinly slice:
1 red pepper, 1 yellow pepper, 1 courgette, 1 carrot, 1 red onion
Place in bowl with:
2 cloves crushed garlic (optional), ¼ cup tamari, ¼ cup olive oil, 2T chilli powder (optional), 1t cumin powder, 1t ground coriander, handful chopped fresh coriander.
Mix well and leave to marinade for a few hours. The longer you leave it, the softer the veggies become.
 
Serve in lettuce leaves with toppings.

Courgette ribbons dressed in a delicious pesto sauce!
 
Pesto Sauce...
1c basil
1c rocket
1 clove garlic
1/4c pine nuts
1T olive oil
1/4t salt
2t lemon juice
 
Peel courgettes and spiralise. Place in a large bowl and sprinkle with salt. Leave to one side to soften as you prepare the toppings. When ready to serve, rinse and drain.  
 
Pulse Pesto sauce ingredients in a food processor until broken down, but leave some texture.

Mix pesto into courgette ribbons and add chopped avocado and chopped olives.
