3 Pesto Courgetti          (click for next recipe)

 
Better than pasta!
Courgette ribbons dressed in a delicious pesto sauce!
 
Pesto Sauce...
1c basil
1c rocket
1 clove garlic
1/4c pine nuts
1T olive oil
1/4t salt
2t lemon juice
 
Peel courgettes and spiralise. Place in a large bowl and sprinkle with salt. Leave to one side to soften as you prepare the toppings. When ready to serve, rinse and drain.  
 
Pulse Pesto sauce ingredients in a food processor until broken down, but leave some texture.

Mix pesto into courgette ribbons and add chopped avocado and chopped olives.

Moroccan Salad

 
2 Carrots, grated
Handful of fresh coriander
1/2 Red onion, finely sliced
3T Raisins
2T Pine nuts
1TLemon juice
1T Hemp seeds
 
Dressing:
Blend: 1T hemp oil, 1/3t cumin, 1/2t ginger,
2 cardamon pods, paprika, salt.
 
Pour over salad ingredients and toss.

Mushroom Caesar Salad (with Cheesy Italian Croutons)

 
 
A quick and easy lunch or side salad. You will need to
make the croutons in advance but they store well.
The mushrooms also benefit from advance preparation.
 
1 Romaine lettuce, chopped into bitesized pieces
Toss romaine lettuce in dressing before adding mushrooms
 
Dressing
1c cashews, soaked in water for 2+ hours
Juice of 1/2 lemon
1 clove garlic
1/4t salt
1c water
Put all ingredients in high speed blender and blend till smooth
 
Mushrooms
2c mushrooms, sliced
2T tamari
2T olive oil
1 clove of garlic, finely chopped
Combine mushrooms with the rest of the ingredients
Leave to marinade for 2 hours
Dehydrate 4-6 hours (optional, but it intensifies the flavour)

Thai Noodle Salad

 
2 courgettes
Sugar snap peas, sliced
10cm cucumber, diced
2 spring onions, chopped
1 avocado, diced
5T lime juice
2T olive oil
1T agave
2.5cm ginger
1 red chili
4T chopped coriander
Lime slices to garnish
 
Spiralise courgette and sprinkle with salt. Toss.
Leave to one side to soften. Blend together lime juice,
olive oil, agave, ginger, chili and coriander to form dressing.
 
Stir cucumber, sugar snap peas, spring onion and avocado into the courgette noodles.. Pour dressing over courgette noodles and toss. Sprinkle with pumpkin seeds and shelled hemp seeds. Garnish with lime slices.
